Nourish

Nourish - Parmesan Stuffed Figs Refreshment is one of the simplest pleasures in life and we eat everyday. I love food that pops with flavor, and I am mindful as I eat to save all the best tidbits on the plate for what I lovingly refer to as “the last bite”. This bite is the cumulating moment of the entire eating experience, where the best flavors are compacted into one amazing bite. I gently scoop it all together, close my eyes and then taste, letting my taste buds rejoice!

The recipes you find here are inspired by “the last bite”, my goal is to infuse each bite with that vibrant profile. I will often give ideas for “upping the YUM” even more, with simple tips for taking your food from delicious to extraordinary.

These recipes are for everyone and can be modified for most diets and eating styles. Recipes include whole foods, are naturally gluten free and display the best of what Mother Nature offers to nourish us every single day- fresh, seasonal, natural, organic, humanely raised and artisan products.

Get ready to infuse your food with YUM!

Pumpkin Pie Smoothie with Goat’s Milk Caramel and Icelandic Skyr

November 3, 2015 By Jenn Campus 3 Comments

Who doesn’t love a pumpkin pie smoothie this time of year? As my internal seasonal food calendar informs me, it is entirely appropriate to continue enjoying pumpkin spice everything through Thanksgiving. So go one and give into that craving! What makes this smoothie special is that I have used Icelandic Skyr and Cajeta, goat’s milk caramel to give it a slightly unique flavor; not too sweet and ...

Delicata Squash with Savory Pork Stuffing and Balsamic Syrup

October 21, 2015 By Jenn Campus 4 Comments

This is literally the best time of year to showcase seasonal eating. When the world is tired of hearing of pumpkin spice everything, I am still reveling in the fact that so many people are conscious of bringing seasonal foods to the table this time of year. From apples pies and cider, to pumpkin lattes and muffins, I love it all. For me the real star of the season is winter squash. There ...

Cilantro to Coriander, Edible From Leaf to Seed

October 8, 2015 By Jenn Campus 8 Comments

Coriander is the seed of an annual herb in the Apiaceae family, of which the leaves are known as cilantro. The entire plant is edible and is well loved for the citrus flavors it imparts to the dishes of various world cuisines. It is also known as a folk charm to promote love and well being. What is my favorite thing about growing cilantro? A fall crop of coriander seeds! This is a plant that ...

Preserving the Harvest: Herbal Vinegars, Not Just for Salads Anymore

October 1, 2015 By Jenn Campus 5 Comments

Herbal vinegars are a delightful way to preserve the harvest and to add vibrant flavor to all your favorite dishes! Harvest season is in full swing right now. Nights are getting cold and it is time to pull everything from the garden that could be damaged by frost. There are many herbs that are somewhat cold hardy. Even here in northern Vermont, I can still see the green of winter savory, thyme ...

The Best Balela (Mediterranean Chickpea Salad)

Balela salad is all the rage. Here are my lip-smaking ideas to make it the most delicious one you've had yet! Fresh Figs with Parmigiano-Reggiano and Balsamic Reduction

September 3, 2015 By Jenn Campus 4 Comments

Beautiful, fresh and elegant. Perfect for sharing with friends and family. There is just something magical about the pairing of figs and balsamic vinegar. The sweet, syrupy richness of the vinegar, the sharp taste of the cheese cutting through the sweetness of both fig and balsamic is unparalleled. Just look at the color of that fig – if that isn’t a sexy show stopper on your summer table, I ...
