Creamy Coconut Pudding with Pomegranate Arils

Spicing up organic boxed pudding with coconut and pomegranate takes this dessert from humble to crave-able!

Serves: 4
  1. Combine pudding mix, half of the coconut flakes, cinnamon and milk in a small saucepan.
  2. Whisk well to incorporate all ingredients and to dissolve mixture.
  3. Cook over medium-low heat, whisking constantly.
  4. Bring mixture to a boil, cook and stir for an additional minute before removing from heat.
  5. Pour pudding into 4 serving dishes or into a small square glass container.
  6. Sprinkle the remaining coconut over the top of the pudding.
  7. Refrigerate at least 90 minutes.
  8. To serve, sprinkle with as many pomegranate arils as you like.
